The older I get the busier life becomes. And on top of that, I already am the type of person that will forget to eat when I am doing something I love. Yikes! So bring on the simple, healthy, grab and go, nutrition packed treats that keep me full, energized and in balance with my nutritional needs.
I am not really sure why, but I love getting all my ingredients together like this and then taking a moment or two to look at them before I make whatever it is I am making.
This isn’t just for the purpose of a picture…I actually do this picture or not. 🙂
I just like fully seeing everything that is going into what I am making and soon going into my tummy.
Dump everything into a big bowl and mix. Roll into whatever shape you like. Snack bites like this ↓ are fun or bars are nice too. Adjust your sunflower butter and honey to get the right consistency for you and whatever shape you want to make.
1 cup shredded coconut
1/2 cup chopped pecans
1/3 cup sesame seeds
1/4 cup pumpkin seeds
1/4 cup hemp seeds
1/4 cup flax meal
2 tsp cinnamon
1/4 cup dried apricot
1/2 tsp salt
1/4-1/2 cup raw honey
1/4 – 1/2 cup sunflower seed butter
Add all ingredient into a bowl and mix well. Adjust liquid ingredients ( sunflower butter and honey) until you reach a consistency you can manipulate into a bite size ball or bar.
Form into the shape you desire and snack away 🙂
These are very filling. One to two bites and I am usually satisfied.
Store in the fridge.
