Fresh – Vibrant – Raw – Colorful
Foods that feed our soul and make us feel alive and vibrant. I have been craving fresh raw foods lately. I wasn’t listening to my body the last few days, but I new something was off. As soon as I starting making a meal that was raw and fresh my mood and vibrancy immediately returned.
I hope it does the same for you.
1/2 cup Corn
1 small Cucumber
1 Heirloom Tomato
1/4 cup red onion
2 tbsp white wine vinegar
Dice your red onion and place in a small bowl with the vinegar. Let set. ( this will make your onion sweeter and get rid of the super potent harsh taste. Leave as if you like that!) Dice your cucumber, tomato, and avocado. Put in separate bowl. Drain your red onion and add to remaining ingredients. Mix and enjoy.
Don’t forget to be fully present while you eat and chew thoroughly!
